Full Leg of Lamb
Taste the quality of our lamb reared on luscious green grass that helps provide the sweet taste. Our craft butchers can prepare boneless for easy to carve, tunnel roll, with shank bone left in or butterfly which is great for a barbecue.
Full Rack of Lamb
This attractive, bone-in roast is one of the finest cuts of lamb. Brown it in the pan, then roast gently for a flavour that is simply unbelievable. Presented here as a guard of honour, which consists of two racks tied together. Our master butchers will French trim them for you.
Shoulder of Lamb
This is arguably the best cut of lamb. A slow cook, allow at least 4 hours at 160˚C/140˚C gas mark 3. We have many ways to prepare this boneless but suggest to leave the bone on for flavour. The bone can be removed easily from the tender cooked meat.
We cut these from prime leg. Bone in or out. These are great for tenderness and fool proof to cook, grill or flash fry. Leave the bone in for extra flavour.
Another fantastic cut for slow cooking and highly underrated. Great for a dinner party. Slow cook to the point when the meat just falls off the bone.
Our cutlets are arguably the most flavoursome of the lamb cuts. What can we say grill, oven cook or flash fry. We recommend leaving a little pink with a dollop of mint sauce.
Rare to come across these days but not in FX Buckley’s Moore Street. We have them fresh daily. Our craft-butchers can stuff them for you here. We always use our homemade stuffing and recommend cooking in the oven with some gravy on the side to serve with the dish.
Great for a starter or a dinner. On request our butchers can prepare for cooking and also suggest recipes. One we like here is simply fry the kidneys in brandy, add fresh pouring cream and reduce! You can't go wrong. Another classic and very tasty.
Great flavour in these burger. Highly suitable for barbecue or grill and we only mince the highest grade from the best Irish farms.
Whatever your preference we can cut the shoulder or leg. Only the freshest finest lamb is diced here and it is a far cry from the supermarkets. This is perfect for slow-cook casseroles or try a spicy lamb rogan josh.
Stuffed Saddle Lamb
These are really taking off at the moment especially for dinner parties. We have a few different recipes for this. Our craft-butchers can guide guide you through the different fillings we do. We also score the skin and rub a simple seasoning on request.
Side Loin Chops
For the customer who likes more meat on his lamb chops. Succulent, melt in your mouth Irish lamb all locally sourced and cut fresh every day by our craft butchers.
Full Saddle of Lamb
This is great for big events. We sell many of these at Christmas for example. You can’t beat free-range outdoor lamb reared on Ireland’s best farms.
Loin Lamb Chops
These are further up the loin from the cutlets and are probably our biggest seller when it comes to lamb. Chops are an all time sought after cut. Juicy, tender and an Irish favourite.
